Fred’s journey started in Akaroa, where he ran an award-winning butcher shop known for sausages that kept taking out national titles. The shop became a local institution, but after years of early mornings, late nights, and a thriving customer base, Fred felt the pull for a new challenge and a new pace.
So he made the big call: sell the shop, pack up, and head for Wānaka.
Now he’s pouring that same passion and craft into Fred’s Pâte, creating beautifully balanced pâtés, terrines, and cultured creations that live up to his tagline: The Cultured Carnival. Every batch carries the precision of a butcher, the flair of a foodie, and the joy of someone who genuinely loves what he makes.
Fred told us he’s thriving in Wānaka’s supportive community and enjoying the freedom to experiment, create, and connect with locals at markets and events across the region.
